Perfect Vegan Cookies
1/2 C Earth Balance (1 stick)
1/4 C dark brown organic sugar
1/4 C organic white sugar (I use Florida Crystals)
1 t vanilla extract
1 1/2 t En-Er-Gee egg replacer dissolved in 3 T warm water
1/2 C whole wheat flour
1/4 C unbleached wheat flour
1/2 t baking soda
1/4 t salt
1 T wheat germ
1 T ground flax seed
1/4 C vegan chocolate chips (I use Sunspire)
1/4 C chopped walnuts
2 T chopped raw pepitas
Cream together margarine and sugar until fluffy. Beat in vanilla extract and egg replacer. Beat in flours, baking soda, salt, wheat germ, and flax seed; dough will be very stiff. Stir in remaining ingredients by hand. Shape into small balls and bake at 350 degrees for 10-12 minutes or until golden brown. Makes about 2 dozen small cookies.
