A minimum fuss recipe great for an appetizer, at holiday paties or all year round.
Serves 12
3 loaves ciabatta or other bread, sliced
3 garlic cloves, halved
About 3/4 cup olive oil
12 ripe tomatoes, peeled and sliced
Handful of pitted olives
Bunch of marjoram
2 lb fesh sliced mozzarella cheese, drained and sliced
Bunch of fresh basil
Sea salt and freshly ground black pepper
Broil bread slices under a hot broiler until lightly toasted, and then rub with cut side of garlic. Put garlic rubbed bread on a baking tray and sprinkle with a little olive oil. Preheat oven to 350.
Arrange sliced tomatoes on bread. Add olives, marjoram mozzarella, basil, salt and pepper.
Cook in preheated oven for 15 to 20 minutes or until mozzarella has melted. Remove from oven and let cool. Serve.
