Granola Cookies
Makes 24 Cookies
Ingredients:
1 cup Soy butter, softened (we use Earth Balance)
1 Cup Honey or Grade B maple Syrup
4 Egg Whites or 2 Whole eggs
1 Teaspoon Vanilla Extract
1 Cup Oat Granola
1 Cup Assorted Dried Fruit, finely chopped
3 Tablespoons Flax Seeds
1/2 Cup raw Slivered Raw Almonds
Method
Preheat oven to 375 degrees F
In a medium bowl with a mixer, cream together the soy butter, and honey. Beat in the egg and vanilla.
In a separate bowl, combine remaining ingredients.
Stir into the creamed mixture.
Drop dough by heaping teaspoonfuls onto parchment lined cookie sheets, about 2 inches apart (or mini muffin tins)
Bake 12 to 15 minutes in the preheated oven, until cookies are lightly browned around edges. Remove cookies to wire racks and allow to cool.
