Mango Chutney

This perfect accompaniment goes well with everything, it can spice up sandwiches, tofu, chicken or rice. Try it on rice noodles too! 

Apple Pear and Mango Chutney

2 cups chopped Red Onion
1/2 cup Cider Vinegar
3/4 pound Light Brown Sugar
2 cups diced Apple
2 cups diced Pear
1 teaspoon Curry Powder
1 cup diced Mango

Directions:
Place red onion, vinegar and brown sugar in a stainless pot and bring to the simmer and cook for 30 minutes (or until it forms a syrup). Add diced apples, pears and curry powder and cook for a further 20 minutes (or until fruit has softened). Remove from the heat and add Mango.
