Mexican Seitan

Seitan, or wheat gluten, is a low fat pleasantly chewy high-protein food. The texture in this dish is so similar to ground or shredded beef you might fool a couple of people with it.

1 cup chopped onion

3 garlic cloves

2 tablespoons olive oil

1/2 medium green bell pepper

1/2 pound seitan

1 tablespoon chili powder

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1 teaspoon soy sauce

1 teaspoon hot pepper sauce

1 cup chopped tomatoes

Saute the onions and garlic in the oil for about 4 minutes, until softened. Chop the pepper and add it to the pan. Coarsley grate or chop the seitan. Mix it into the vegetables along with the chili powder, oregano, basil, soy sauce, and pepper sauce. Saute for a minute, stirring constantly to prevent sticking. Stir in the tomatoes, reduce the heat, and simmer, uncovered, for about 5 minutes. Mexican Seitan should be moist not too juicy.
